  • 1 roasting pan
  • kitchen twine
  • meat thermometer


  • 1 whole chicken, 6 lbs
  • 1 lemon (quartered)
  • 4 sprigs fresh parsley
  • 3 sprigs fresh thyme
  • 4 sprigs fresh rosemary
  • 2 sprigs fresh sage
  • 3 tbsp grapeseed oil
  • sea salt
  • pepper


  • Preheat oven to 350 degrees F and combine ingredients.
    Roasted Chicken -
  • Place chicken on roasting pan and pat dry with a paper towel.
  • Tuck back wings. Brush grapeseed oil over chicken skin, front and back, plus inside of cavity.
  • Rub salt and pepper, very generously, on and under skin and inside of cavity.
  • Place lemon, parsley, thyme, rosemary and sage inside of cavity.
  • Tie legs together with kitchen twine.
    Roasted Chicken -
  • Place chicken in preheated oven and cook for 1 hour and 15 minutes or until the internal temperature reaches 165 degrees F.
  • Remove chicken from oven and let rest at least 15 minutes.
