  • 1 Stand mixer optional

  • 1 cup butter (2 sticks) room temperature
  • 1 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 eggs large
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 cups all-purpose flour
  • 2 cups old-fashioned rolled oats
  • 2 cups chocolate chips

  • Preheat oven to 350° F. Lightly grease a 9 x 13 inch pan with cooking spray (I use Pam Baking spray) or line with parchment paper.
  • In a large mixing bowl, beat together the butter, brown sugar, and white sugar until smooth and light.
  • Add the eggs one at a time, mixing after each addition. Then, add the vanilla.
  • In a separate bowl, combine the dry ingredients - salt, baking soda, baking powder, flour and rolled oats.
  • Add the dry ingredients to the creamed sugar mixture and stir until combined.
  • Stir in the chocolate chips.
  • Press the mixture into the prepared pan. Bake for 30 minutes or until golden brown.
  • Cool completely before cutting.
