
Baked Mashed Potatoes
This is my unconventional way of making mashed potatoes, which came about by accident. Creamy on the inside and a nice crust on the outside, these potatoes are the perfect side dish!
Equipment
- 1 Stand mixer
Ingredients
- 8 medium russet or Yukon gold potatoes (peeled & cut into 1/4 pieces
- salt (to taste)
- 1/3 cup milk
- 4 tbsp butter
- 2 tbsp cream cheese
Instructions
- Peel and cut potatoes into ¼ pieces. Add to large pot.
- Cover potatoes with water and add salt to water.
- Bring potatoes to a boil and cook until tender, about 30 minutes.
- Drain potatoes and transfer to a stand mixer. On low, slowly add the milk, butter, and cream cheese. Mix well.
- Heat oven to 375 degrees F.
- Spray an oven safe bowl with cooking spray and transfer the potatoes.
- Bake, uncovered, for 20 minutes until the peaks of the potatoes form a nice golden brown.
- Serve warm and enjoy!
Notes
If you're short on time, simply follow steps 1 - 4 for delicious mashed potatoes.
