Baked Mashed Potatoes

This is my unconventional way of making mashed potatoes, which came about by accident. Creamy on the inside and a nice crust on the outside, these potatoes are the perfect side dish!

  • 1 Stand mixer


  • 8 medium russet or Yukon gold potatoes (peeled & cut into 1/4 pieces
  • salt (to taste)
  • 1/3 cup milk
  • 4 tbsp butter
  • 2 tbsp cream cheese


  • Peel and cut potatoes into ¼ pieces. Add to large pot.
  • Cover potatoes with water and add salt to water.
  • Bring potatoes to a boil and cook until tender, about 30 minutes.
  • Drain potatoes and transfer to a stand mixer. On low, slowly add the milk, butter, and cream cheese. Mix well.
  • Heat oven to 375 degrees F.
  • Spray an oven safe bowl with cooking spray and transfer the potatoes.
  • Bake, uncovered, for 20 minutes until the peaks of the potatoes form a nice golden brown.
  • Serve warm and enjoy!
