
Pumpkin Streusel Muffins
These pumpkin spice muffins are so moist and soft, topped with spiced streusel and vanilla glaze. Perfect for a crisp autumn morning with your coffee or tea. It doesn’t get much better than this!
Ingredients
Pumpkin Muffins
- 2 large eggs (lightly beaten)
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1 cup canned pumpkin puree
- 2 tbsp milk
- 1 1/2 tsp vanilla
- 1/2 cup butter (unsalted, melted, and cooled)
- 1 1/4 cup all-purpose flour
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 2 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
Streusel Topping
- 1 cup all-purpose flour
- 1/2 cup light brown sugar (tightly packed)
- 1/3 cup granulated sugar
- 1 tsp pumpkin pie spice
- 6 tbsp butter (unsalted, melted, and cooled)
Vanilla Glaze
- 3/4 cup powdered sugar
- 1/2 tsp vanilla
- 3-4 tsp milk
Instructions
- Preheat oven to 375F and line a 12-count muffin tin with paper liners and spray lightly with nonstick baking spray.
Pumpkin Muffins
- Whisk the eggs, granulated sugar, brown sugar, pumpkin, milk, vanilla, and cooled, melted butter until well combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, pumpkin pie spice, cinnamon, nutmeg, and cloves until well-combined.
- Gently stir the dry ingredients into the wet ingredients until just combined. Be careful not to over mix the batter.
- Evenly divide muffin batter into prepared muffin tin.
Streusel Topping
- In a small bowl, whisk together flour, granulated sugar, brown sugar, and pumpkin pie spice. Add melted butter and stir with a fork until crumbly. Don’t over mix the streusel.
- Sprinkle the streusel over muffin batter and gently press the topping into the batter.
- Bake muffins on the middle rack until a toothpick inserted into the center comes out clean or with a crumb or two sticking to it, about 25minutes. Remove from the oven and let cool.
Notes
If you don’t want to use paper liners or do not have any, just spray the muffin tin with nonstick baking spray. Spraying the paper liners with nonstick baking spray helps remove the muffin from the liner without sticking.
