  • donut pan(s)
  • 1 stand mixer or hand-held mixer
  • 1 pastry bag you can also use a ziplock bag with the end slipped off

For the donuts

  • 1/2 cup canola oil
  • 3 eggs (large)
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups pumpkin puree
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/2 tsp pumpkin pie spice
  • 1 tsp salt
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla
  • 1 3/4 cups all-purpose flour

For the cinnamon & sugar coating

  • 1/2 cup granulated sugar
  • 1 1/2 tsp ground cinnamon
  • 2 tbsp butter (melted)

Making the donuts

  • Preheat oven to 350 degrees F. Spray donut pan with cooking spray.
  • Using a stand or hand-held mixer, beat together oil, eggs, sugar, pumpkin, cinnamon, nutmeg, ginger, salt, baking powder and vanilla until smooth.
  • Add the flour and stir until smooth.
  • Fill each donut cup about 3/4 full. I used a pastry bag with the end snipped off.
  • Bake for 15 minutes, or until a cake tester inserted into the center of one comes out clean.
  • Allow them to cool slightly before removing from pan.

Making the cinnamon & sugar coating

  • Whisk together sugar and cinnamon in a shallow bowl until well combined.
  • Brush each donut with melted butter, then toss in cinnamon-sugar mixture until evenly coated.
