
Pumpkin Spice Donuts
You'll love these baked, not fried, donuts! Such a sweet treat for the fall.
Equipment
- donut pan(s)
- 1 stand mixer or hand-held mixer
- 1 pastry bag you can also use a ziplock bag with the end slipped off
Ingredients
For the donuts
- 1/2 cup canola oil
- 3 eggs (large)
- 1 1/2 cups granulated sugar
- 1 1/2 cups pumpkin puree
- 3/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/2 tsp pumpkin pie spice
- 1 tsp salt
- 1 1/2 tsp baking powder
- 1 tsp vanilla
- 1 3/4 cups all-purpose flour
For the cinnamon & sugar coating
- 1/2 cup granulated sugar
- 1 1/2 tsp ground cinnamon
- 2 tbsp butter (melted)
Instructions
Making the donuts
- Preheat oven to 350 degrees F. Spray donut pan with cooking spray.
- Using a stand or hand-held mixer, beat together oil, eggs, sugar, pumpkin, cinnamon, nutmeg, ginger, salt, baking powder and vanilla until smooth.
- Add the flour and stir until smooth.
- Fill each donut cup about 3/4 full. I used a pastry bag with the end snipped off.
- Bake for 15 minutes, or until a cake tester inserted into the center of one comes out clean.
- Allow them to cool slightly before removing from pan.
Making the cinnamon & sugar coating
- Whisk together sugar and cinnamon in a shallow bowl until well combined.
- Brush each donut with melted butter, then toss in cinnamon-sugar mixture until evenly coated.
