
White Turkey Chili
This white turkey chili is a healthier alternative to regular chili. This dish is so versatile that you can make it as spicy or savory as you’d like, to suit your taste buds. I like to garnish this with green onions, shredded cheese, and sour cream, but you can use whatever you prefer!
Equipment
- 1 Dutch oven
Ingredients
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 tbsp vegetable oil
- 2 cans green chilis (4 oz cans)
- 2 lb ground turkey
- 2 tsp salt
- 1 1/2 tbsp cumin (ground)
- 1 tsp black pepper
- 3 cups chicken stock
- 2 cans cannellini beans (15 oz cans)
Garnish
- shredded cheese (cheddar, Monterey Jack or Mexican blend)
- green onions (diced)
- sour cream
Instructions
- Add the vegetable oil to a Dutch oven and heat to medium high heat. Add the onion and sauté until soft, about 5 minutes.
- Then add the garlic and sauté for about 30 seconds to 1 minute. Be careful not to burn the garlic.
- Add the green chilies and ground turkey. Season with salt, cumin, and black pepper. Combine, and cook over medium high heat until the turkey is browned.
- Add the chicken stock and bring the mixture to a boil. Once the mixture is boiling, reduce heat to low, and simmer for 20 minutes.
- Add the beans, and cook for another 15 - 20 minutes, until the beans are warmed through. Add more salt or other seasonings to your taste.
- Divide between bowls and serve with your favorite toppings (green onions, shredded cheese, sour cream, etc). Enjoy!
Notes
For a complete meal, I like to pair this chili with corn bread and a side salad.
