Tuscan Chicken Soup

This simple, hearty soup is packed with flavor! Serve with a very generous helping of fresh rustic bread, this will surely warm your soul.

Ingredients
  

  • 2 tbsp olive oil
  • 1 onion (peeled and minced)
  • 2 cloves garlic (peeled and minced)
  • 2 sprigs fresh thyme
  • 4 stalks celery (diced)
  • 4 medium carrots (peeled and chopped)
  • 3 medium potatoes (peeled and diced)
  • 2 32 oz + 3 cups good-quality chicken stock
  • 1 tsp salt
  • 1 tsp pepper
  • 1 15 oz cans cannellini beans (washed and drained)
  • 2 rotisserie chickens (shredded)
  • 2 8 oz packages spinach

Garnish

  • fresh parsley (chopped)
  • finely grated pecorino romano cheese

Instructions
 

  • Heat the oil in a large Dutch oven. Add the onion and cook for 10 minutes on a low-medium heat, stirring occasionally until softened.
  • Add the garlic and thyme and cook for a further 2 minutes.

  • Add the celery, carrots, and potatoes, stir, then add in the chicken stock, salt, and pepper. Increase heat to bring to a boil (about 10 minutes), then cover and simmer for 25 minutes.

  • Add in the drained cannellini beans, cover, and cook for an additional 5 minutes.
  • Add the shredded chicken and heat through for 3 minutes, then gradually add the spinach. Stir and simmer for about 2 minutes until the spinach has wilted. This may look like a lot of spinach, but it will wilt down very quickly.

  • Test and add more salt and pepper, if needed.
  • Divide between bowls, topped with fresh parsley and grated pecorino romano cheese. Serve with some toasted rustic bread.

Notes

Serve with:
1 loaf fresh rustic bread. Slice into thick slices, drizzle with olive oil, sprinkle with Italian season (I use McCormick Italian Herb Grinder), then toast.
