  • 10.5" casserole dish I use a 10.5" enameled cast iron casserole dish for best results.
  • 1 food processor


  • 1 lb fresh strawberries hulled and sliced
  • 1 tbsp granulated sugar
  • 3 eggs
  • 1 cup milk
  • 2/3 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • powdered sugar to sprinkle when finished


  • Preheat the oven to 350°F.
  • Butter a 10.5" casserole dish and set aside. I use a 10.5" enameled cast iron casserole dish for best results.
  • Hull the strawberries and slice in half. Place in a bowl, then toss the strawberries with 1 tablespoon sugar and set aside.
  • In a food processor, add the eggs, milk, flour, granulated sugar, teaspoons vanilla, and salt. Give it a quick blend, about 15 - 20 seconds.
  • Arrange the strawberries in a single layer on the bottom of the buttered dish and pour the batter over the strawberries. The batter will be very runny.
  • Bake in the preheated oven for about 35 minutes. The Clafoutis should be beautifully puffed and golden with no movement in the center.
  • Sprinkle with powdered sugar and serve warm. Enjoy this for dessert or brunch!
