Spoon bread, also known as corn casserole or corn pudding, is a creamier version of cornbread that you eat with a spoon. This is a favorite in my house during the holidays and also goes well with tacos!

  • 1 package corn muffin mix I use Jiffy
  • 1/2 cup butter melted
  • 1 can (14.75 oz) whole kernel corn drained
  • 1 can (14.75 oz) cream style corn
  • 1 cup sour cream
  • 2 eggs
  • shredded cheddar cheese optional


  • Preheat oven to 375°F. Grease a 2.2 or 2.5 quart casserole dish.
  • Pour the butter and corn into a mixing bowl. Blend in the sour cream.
  • In separate bowl, beat eggs and stir into casserole mix.
  • Add muffin mix. Blend thoroughly and transfer to casserole dish.
  • Bake 35 minutes or until center is firm.
  • Spoon onto plates or in small bowls. Sprinkle a small amount of cheddar cheese on top (optional).
