Sausage & Tortellini Skillet

My husband and I refer to this dish as a “pandemic recipe”. During the lockdown, this came about by simply cooking whatever we had on hand, in the freezer, refrigerator and pantry. We loved it so much, it’s now one of our favorite dishes…and it’s even better the next day! **Be sure to read my notes after the recipe**

  • 6 sweet Italian sausage links
  • 19 oz tortellini frozen or fresh
  • 3/4 cup olive oil
  • 10 cloves garlic minced
  • 1 cup basil fresh, chopped
  • 1/4 cup parsley fresh, chopped
  • 1 1/2 tsp Italian herb seasoning I prefer McCormack Italian Herb Seasoning Grinder
  • 1/2 cup Pecorino Romano cheese grated
  • salt to taste
  • pepper to taste


  • Preheat gas or charcoal grill to 450F. Place sausage links on grill and cook about 7 minutes on each side and until the internal temperature reaches 160F. Set aside and let rest for 15 minutes.
  • In a large pot, boil salted water. When water begins to boil, add the tortellini. Cook as directed on package, about 3-5 minutes.
  • In a large skillet, heat olive oil, garlic, basil, parsley, Italian seasoning, and Pecorino Romano cheese over medium heat.
  • Cut the sausage into ½” inch pieces and add to the skillet.
  • Drain the tortellini and add to the skillet. Mix all ingredients very well and let simmer for about 2 minutes.
  • Separate into individual dishes, garnish with Pecorino Romano grated cheese, fresh parsley (optional), a drizzle of olive oil (optional) and enjoy!


Time management is really important with this recipe. I usually work on steps 1, 2, & 3 simultaneously. I begin boiling the water once the sausages are put on the grill. Then I start on warming the olive oil sauce.
