Equipment

  • 1 Rimmed baking sheet with rack

Ingredients
  

  • 1/2 cup drained prepared horseradish
  • 2 tbsp Dijon mustard
  • 3 tbsp fresh parsley chopped
  • 1 1/2 tsp minced garlic 1 clove
  • 1 1/2 tsp kosher salt
  • 3 lb eye roast beef

Instructions
 

  • Remove the roast from the fridge about 30 minutes before cooking so you aren't cooking it cold.
  • Preheat oven to 450°F.
  • Pat the roast dry with paper towels. Score the top of the roast (cut slits in a criss-cross pattern).
  • Stir together horseradish, mustard, parsley, garlic, and salt in a bowl.
  • Rub mixture on roast, pressing to adhere, and place on a rimmed baking sheet with rack.
  • Roast for 12 minutes, then drop oven temperature to 325°F until a thermometer inserted in thickest portion of beef registers 135°F for medium-rare.
  • Remove to a cutting board, and let stand 20 minutes before slicing. I prefer thin slices, but you can slice to your liking.

Notes

Serve with your favorite potatoes and sautéed green beans.
Enjoy with your favorite glass of red wine, like a Cabernet Sauvignon.
You'll see in my instructions I talk about scoring the meat before adding the rub. So, what does that mean?
Scoring meat before you cook it results in a greater surface area exposed to the heat, leading to more even cooking. When scoring, the knife blade should penetrate only about 1/8 to 1/4 inch deep. In general, score marks should be spaced approximately 1 inch apart. From there, you can add a criss-cross pattern, insert chopped aromatics such as garlic or ginger into the cut meat, or press a dry seasoning rub into the little pockets.
