Crustless Broccoli Quiche

Perfect for brunch, this simple quiche is as easy to make as it is delicious! You won't have to roll out a crust, saving time (and hassle). This quiche recipe is so versatile, you can add whatever veggies you have on hand. I love broccoli and cheddar together, which is why I used it in this recipe.

  • 1 9 inch pie dish


  • 2 tbsp extra-virgin olive oil
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 2 cups broccoli florets chopped
  • 6 eggs large
  • 3/4 cup 1% milk
  • 1/4 cup sour cream
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 cups sharp cheddar cheese shredded


  • Preheat oven to 375°F. Coat a 9-inch pie dish with cooking spray.
  • Heat oil in a large skillet over medium heat. Add the onion, then cook, stirring, until beginning to soften, about 4 minutes.
  • Add broccoli, then cook, stirring, until the broccoli begins to soften, about 4 minutes. Remove from heat.
  • Add garlic, then cook, stirring constantly, for 1 minute. Be careful not to overcook the garlic.
  • In a large bowl, whisk eggs, milk, sour cream, salt and pepper. Fold in the broccoli mixture and cheese.
  • Pour into the prepared pie dish.
  • Bake for 30 minutes until set and golden.
  • Let stand for at least 10 minutes before serving. Then dig in and enjoy!


This quiche recipe can be adjusted to your liking. Add your favorite veggies, cheese or spices (like cayenne) and have fun making it your own!
