This simplified chicken saltimbocca is an Italian dish that looks and tastes super impressive but is easy enough to make on a weeknight. Chicken cutlets wrapped in prosciutto in a white wine sauce, what’s not to love.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • salt to taste
  • pepper to taste
  • 4 - 8 sliced prosciutto
  • 12 sage leaves fresh
  • 2 tbsp extra-virgin olive oil
  • 3/4 cup dry white wine I prefer Sauvignon Blanc
  • 3/4 cup chicken broth
  • 1 tbsp all-purpose flour

Instructions
 

  • One by one, place each chicken breast between two sheets of parchment paper. Gently pound, with the flat side of a mallet or a rolling pin, to an even 1/4-inch thickness.

  • Place each chicken breast on plate, or on your working surface, and season with sea salt and pepper on both sides.

  • Place 3 fresh sage leaves on top, then wrap each chicken breast with a slice of prosciutto.

  • Heat the olive oil in a heavy skillet, over medium heat.
  • Add the chicken breasts and cook until golden brown and cooked through, 4 - 5 minutes per side.
  • Once your chicken is done, remove from the skillet and set aside on a plate.
  • Turn down the heat to low. Pour in the wine and cook stirring constantly, while scraping your pan to loosen the browned bits. Be very careful during this step since the wine may splatter in the skillet.

  • Increase heat to medium, simmer until the wine is reduced and the alcohol is cooked off, about 5 - 6 minutes.
  • Meanwhile, in a small bowl, whisk the broth with the flour until well combined.
  • Pour the broth mixture into your hot skillet with the wine and stir to combine. As soon as it starts bubbling, it should also start to thicken.
  • Return cooked chicken back into your skillet and carefully nestle it into your sauce. For added flavor, add a few extra sage leaves into the sauce.
  • Continue to cook spooning hot sauce all over the chicken until heated through, for about 2 – 3 minutes.

  • Serve while hot and enjoy!

Notes

  • Serve with salad, green beans, brown rice or Lemon Herbed Orzo.
  • For best flavor and results, use a dry white wine that you would drink, because this will produce the very best flavor. For this recipe, I prefer a Sauvignon Blanc. It pairs well with it, too!
  • If you do not have wine on hand or would prefer not to use it, you may substitute the wine for additional stock or broth.
  • Do not use “cooking wine” since most brands have a flavor much like what I imagine rubbing alcohol would taste like.
