Perfect for a chilly day, this rich and hearty beef barley soup will leave you completely satisfied, while warming every inch of your body! I usually make a huge pot of this soup, simmering all day on the stove. The house smells wonderful while this is cooking!

Ingredients
  

  • 1 tbsp olive oil
  • 4 lbs beef (chuck or leftover roast beef)
  • 16 cups beef stock
  • 4 carrots (washed, peeled & diced into small cubes)
  • 4 celery stalks (washed & diced into small cubes)
  • 4 russet potatoes (washed, peeled & diced into small cubes)
  • 1 tsp rosemary (dried)
  • 1 tsp thyme (dried)
  • 1 tsp parsley (dried)
  • 2 cups barley
  • salt (to taste)
  • pepper (to taste)
  • fresh parsley (for garnish)

Instructions
 

  • Dice carrots, celery, and potatoes into small cubes. Set aside.

  • Heat olive oil in stock pot over medium high heat. Season beef with salt and pepper, then add to pot and brown. Do not cook through.
  • Remove from heat. Cut beef into small cubes.
  • Add beef, carrots, celery, and potatoes to stock pot. Pour in beef stock to pot. Add rosemary, thyme, and parsley. Stir well.

  • Turn heat on high and bring to a boil. Once boiling, turndown heat and simmer, covered, for 1 hour.

  • Add barley and simmer for an additional hour. Salt and pepper to taste.
  • Divide into bowls, garnish with fresh parsley and enjoy!

Notes

I usually serve beef barley soup with biscuits (refrigerated or homemade) or with a few slices of toasted rustic bread.
This recipe is very forgiving, so you can adjust measurements to your liking.
